Honey Turmeric Boneless Butterflied Chicken Served With Pearl Couscous Salad by @whatsfordinnerfrances.⁠⁠ ⁠⁠ Save this post for when you want to make it. ⁠⁠ ⁠⁠ INGREDIENTS ⁠⁠ 1 Boneless Butterflied Bare Bird Chicken⁠⁠ 1 tbsp ground cinnamon⁠⁠ 2 tbsp ground cumin⁠⁠ 1 tbsp ground cardamom⁠⁠ 1 tbsp ground turmeric ⁠⁠ 1/2 tbsp paprika⁠⁠ Pinch of salt⁠⁠ 4 garlic cloves, grated⁠⁠ 30 grams or 1 knob ginger, grated⁠⁠ 2 tbsp honey⁠⁠ 180 ml olive oil ⁠⁠ ⁠⁠ METHOD⁠⁠ 1. Preheat oven 200c.⁠⁠ 2. Place chicken on a baking tray lined with baking paper. ⁠⁠ 3. Place all ingredients on top of the chicken and massage well.⁠⁠ 4. Roast for 35 minutes or until chicken is cooked. ⁠⁠ 5. Rest for 5 minutes.⁠⁠ ⁠⁠ PEARL COUSCOUS SALAD⁠⁠ 1. While the chicken is in the oven, make the couscous salad.⁠⁠ 2. Follow the packet instructions to cook. ⁠⁠ 3. Place into a bowl once cooked, add fresh mint & coriander, lemon, salt and a drizzle of oil.⁠⁠ 4. French Chicken Casserole with Apple Cider by ⁠@createcookshare.⁠⁠ ⁠⁠ Save this post for when you want to make it. ⁠⁠ ⁠⁠ Ingredients⁠⁠ 4 The Bare Bird Chicken Drumsticks⁠⁠ 4 The Bare Bird Chicken Thighs⁠⁠ 330ml Dry Apple Cider⁠⁠ 100g crème fraiche (dairy free option)⁠⁠ 4 bacon rashes, chopped⁠⁠ 2 Fuji apples, cored and cut into wedges⁠⁠ 4 garlic cloves, finely chopped⁠⁠ 4 celery sticks, remove string, thinly slice⁠⁠ 1 large brown onion, thinly sliced⁠⁠ 8 springs of thyme, discard stems⁠⁠ 1 Tbsp cornflour in ½ cup cold water⁠⁠ 1 Tbsp quality butter or ghee (dairy-free option)⁠⁠ Sea salt and pepper⁠⁠ ⁠⁠ METHOD⁠⁠ 1. Preheat oven to 190C.⁠⁠ 2. Pat dry with a paper towel the chicken pieces and season with sea salt and pepper. Add to a large non-stick pan with the butter and cook until all sides are golden. Remove and add to a baking dish.⁠⁠ 3. In the same pan add the bacon and lightly brown. Remove and scatter around the chicken.⁠⁠ 4. Next add to the same pan the celery and thyme leaves and over a low heat gently simmer for 3 minutes. Add the onions and garlic and cook a further minute. Remove and scatter over chicken and bacon.⁠⁠ 5. In the same pan add the cornflour that has been dissolved in the cold water along with Dry Apple Cider. Over a low heat gently and continuously stir to combine well. Once it starts to gently boil, turn off the heat and pour in the crème fraiche. Stir to combine well and then pour the sauce mixture over the chicken.⁠⁠ 6. Place into the oven and cook covered for 30 minutes. Then cook uncovered for a further 15 minutes.⁠⁠ 7. While it is cooking place the apples in the same pan – add an extra teaspoon of butter if needed – and lightly cook until golden on each side.⁠⁠ 8. Remove casserole out of the oven and stir in the cooked apple wedges.⁠⁠ 9. Chicken Celeriac & Leek Lattice Pie by ⁠@createcookshare.⁠⁠ ⁠⁠ Save this post for when you want to add this to your weeknight recipe rotation. ⁠⁠ ⁠⁠ Ingredients⁠⁠ 800g The Bare Bird Chicken Thigh Fillets⁠⁠ 300ml fresh cream⁠⁠ 100g plain flour⁠⁠ 300g celeriac, grated⁠⁠ 2 leeks, trimmed, quartered and sliced⁠⁠ 1 litre Chicken stock⁠⁠ 1 tsp ground garlic or garlic granules⁠⁠ ¼ cup fresh thyme leaves, stalks removed⁠⁠ ½ cup fresh parsley leaves, finely chopped⁠⁠ 50g butter⁠⁠ Zest of 1 lemon⁠⁠ 4 Puff Pastry Sheets⁠⁠ 1 egg lightly beaten⁠⁠ ⁠⁠ Method⁠⁠ 1. Add chicken thigh fillets to chicken stock and bring to boil. Reduce heat to a simmer and cook for 10 minutes. Remove chicken and using two forks roughly shred into chunky pieces. Set aside the stock for later.⁠⁠ 2. Melt the butter in a saucepan and add the leeks. Cook gently for 3 minutes until softened. Stir in the flour and cook for a further minute then gradually add the cream stirring continuously.⁠⁠ 3. Add only half the chicken stock, celeriac, thyme, parsley and garlic granules. Cook stirring over a low heat for a further 3 minutes or until it thickens. Stir through the lemon zest and chicken pieces. Season with plenty sea salt and pepper and turn off the heat.⁠⁠ 4. Preheat the oven to 180C fan-forced. Grease a pie dish 30cm in diameter and place the first pastry sheet. Pour into the pie dish the chicken filling.⁠⁠ 5. Cut the remaining pastry sheets into long strips. Brush the lip of the pie dish with a little of the beaten egg, then press down a strip of pastry around the edge to cover it. Brush the pastry with more egg, then weave the other pastry strips under and over each other, pressing down at the edges to make a lattice effect.⁠⁠ 6. Brush the pastry lattice all over with the remaining egg and bake for 45-50 minutes, until the pie filling is bubbling and the pastry is golden. Coconut Poached Chicken with Wild Rice by ⁠ @createcookshare.⁠ Save this post for when you want to add this to your weeknight recipe rotation. ⁠ ⁠ Ingredients⁠ 400g The Bare Bird Chicken Breasts⁠ 400g wild rice, a mixture of white and black⁠ 400g coconut milk⁠ 200g snow peas, sliced diagonally⁠ 100g bean sprouts⁠ 1 litre chicken stock⁠ 2 tablespoons hot chilli sauce⁠ 1 tablespoon brown or coconut sugar⁠ 1 lemongrass stalk, bruised⁠ 5cm piece ginger, grated⁠ Juice of 1 lime⁠ Thai Basil and Coriander leaves⁠ Sea salt and pepper⁠ ⁠ Method⁠ 1. Place coconut milk, chicken stock, hot sauce, lemongrass and ginger in a saucepan and bring to the boil, stirring occasionally.⁠ 2. Reduce heat and add chicken. Cover and simmer for 12 minutes.⁠ 3. In the meantime, cook the rice according to the packet instructions.⁠ 4. Remove chicken and discard the lemongrass. Now add to the stock the lime juice and brown sugar and stir through. Turn off heat but keep covered to keep hot. In the meantime, shred or slice the chicken.⁠ 5. Divide rice and chicken amongst 4 bowls. Top with snow peas, bean sprouts Thai basil and coriander leaves and pour a few ladles of the hot stock in each bowl.
